Last year I posted this recipe for energy balls, which I still make every other week or so. Those things are just perfect for times when you need an energy boost or you need something to grab for on the go. I love to make them before a long road trip, so I know that we have a healthy snack when we're in the middle of nowhere.
Recently I decided I wanted to change it up a bit, since I make them so often. I thought it would be fun to add a bit of dark chocolate this time, still healthy energy balls, but with a bit of an indulgent twist. I hope you enjoy them as much as we did! Dave even took a batch to work with him and although the men weren't sure what to think at first, they ended up loving them.
What you need ≫≫
1 1/2 cups nuts (with nothing crazy added, just sea salt, this time I just used plain unsalted almonds)
1/4 cup dark chocolate (at least 60% cacao, or raw cacao nibs to make this a raw recipe)
2 tbsp orange juice (I used the "simply" brand)
1/2 tsp cinnamon
1 tsp vanilla
honey (about 1/2 cup, but I didn't measure...try to get Grade A honey, the darker the better)
Sea Salt (for dipping)
Mix all of the ingredients (except the sea salt) in a food processor (I love my ninja) until it's a good thick consistency and the nuts are ground. Roll the mixture into balls and sprinkle sea salt onto a plate to lightly dip each ball.
Store in the fridge a few hours to set.
